Almond meal

thanks to a friend and Elana's Pantry, i learned about almond meal,
an option to use for baking instead of flour.
ab-so-lute-ly. the. best. delicious cookies, bars, etc.
if you or anyone you know who is celiac, this is a wonderful alternative.

- chocolate chip cookies -

...ingredients...

...my nutritionist introduced me to agave nectare...
...it took me a year before i drummed up enough courage to taste it...
(i tend to be slightly squeamish for new tastes!)
...it. is. delicious! better than honey...

...the almond meal is ground up almonds...

...healthy stuff!

...i had the mint bar candy on hand and simply broke it up in pieces...


...yummy!

Gluten Free Chocolate Chip Cookies

2 1/2 c. blanched almond flour
1/2 t. celtic sea salt
1/2 t. baking soda
-stir together-
add...
1/2 c. olive oil
1/2 c. agave nectar
1 T. vanilla
...stir together and add choclate chips...

place on parchment lined baking sheet
bake @ 350 12-15 minutes
(watch carefully - they brown quickly)

Oh these sound good. I'll have to try them! I've made almond meal chocolate cake and a white "pound" cake as well, and they are delicious too.

Hi Aunt Esther!!! Where do you get your almond meal? I have a cookbook that calls for it in some of the recipes and am not sure where to get it...anywhere local?

niece Lisa!! go to Elanas pantry on the web - i also found some at a health food store in New Providence...many miles from you! :) or, you can come to my house & i can sell you some out of my supply. :)
